A Wisconsin tavern owner first made this Wisconsin original by blending natural cheeses without the aid of heat to provide his customers with spreadable cheese for snacking. Since taverns were called clubs, and owners packed the cheese in crocks, this Wisconsin original became known as Club or Crock Cheese. A variety of flavors are available. The appearance of Cold Pack is similar to natural cheese. Its texture is soft, creamy, and spreadable. Sometimes it is flavored with spices, fruits, vegetables, or meats for that extra kick. During the period of ripening, it changes its color and the taste of the cheese sharpens.
